"Horse of a different color" means something is very different from what we were talking about before. Imagine we were talking about bananas, and then suddenly we start talking about bicycles. That would be like a "horse of a different color" because bicycles are not the same as bananas. It's like changing to a whole new thing that is not related to what we were talking about before.
